I begged and begged for this recipe. Finally, my neighbor gave it to me this weekend. It is a wonderful coffee cake.

Ingredients

2/3 c
butter, softened
1 c
sugar or splenda
3
eggs, separated
1 tsp
vanilla
2 1/2 c
flour
3 Tbsp
poppy seeds
3/4 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
salt

FILLING

1/3 c
brown sugar, firmly packed
4 tsp
cinnamon
1/2 tsp
instant coffee powder

Step-By-Step

1Cream butter and sugar using mixer in a large bowl, then beat in egg YOLKS and vanilla.
2Combine flour, poppy seeds, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.
3In small bowl with mixer, beat egg whites until stiff peaks form; fold into batter.
4Pour half of the batter into a greased 13 x 9 pan; combine filling ingredients and sprinkle over batter.
5Carefully top with remaining batter and bake at 350 degrees for 35-40 minutes or until toothpick inserted in center comes out clean; cool on wire rack and serve.
