I begged and begged for this recipe. Finally, my neighbor gave it to me this weekend. It is a wonderful coffee cake.

Ingredients For poppy seed coffee cake

  • 2/3 c
    butter, softened
  • 1 c
    sugar or splenda
  • 3
    eggs, separated
  • 1 tsp
    vanilla
  • 2 1/2 c
    flour
  • 3 Tbsp
    poppy seeds
  • 3/4 tsp
    baking powder
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    salt
  • FILLING
  • 1/3 c
    brown sugar, firmly packed
  • 4 tsp
    cinnamon
  • 1/2 tsp
    instant coffee powder

How To Make poppy seed coffee cake

    Cream butter and sugar using mixer in a large bowl, then beat in egg YOLKS and vanilla.

    Combine flour, poppy seeds, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk.

    In small bowl with mixer, beat egg whites until stiff peaks form; fold into batter.

    Pour half of the batter into a greased 13 x 9 pan; combine filling ingredients and sprinkle over batter.

    Carefully top with remaining batter and bake at 350 degrees for 35-40 minutes or until toothpick inserted in center comes out clean; cool on wire rack and serve.
