I decided to create this seasonal bread because a lot of my friends are not pumpkin fans (although I am). But just about everybody likes apples. This is the basic recipe, but you can dress it up however you like..with a crumble topping, a lemon/confectioner's sugar drizzle, or whatever your little heart desires. You can also add walnuts and raisins to the batter. It's yummy that way too.

Ingredients For multi grain apple bread

  • cooking spray
  • 1 Tbsp
    ap flour for dusting pans
  • 1 c
    ap flour
  • 1 c
    whole wheat flour
  • 1 c
    oats ground in food processor or spice mill
  • 1/2 tsp
    salt
  • 2 tsp
    baking soda
  • 1-1/2 tsp
    ground cinnamon
  • 1/2 c
    canola oil
  • 1/2 c
    unsalted butter room temp
  • 1 c
    brown sugar
  • 1 c
    splenda no calorie sweetener
  • 4 lg
    eggs room temp
  • 1-1/2 tsp
    pure vanilla extract
  • 3 c
    peeled, grated apples, i use macs
  • 1
    lemon juiced

How To Make multi grain apple bread

    Pre heat oven to 350 degrees. Prep 2 loaf pans (I use 4-1/2 x 8" pans) with cooking spray and a light dusting of flour. In medium size bowl combine AP flour, whole wheat flour and ground oats. Add salt, baking soda and cinnamon and whisk to incorporate. Set aside. Grate apples in food processor or use a hand grater and squeeze lemon juice over the fruit to eliminate browning. Set aside.

    In large bowl combine canola oil, butter and both sugars. Mix for 3-5 minutes. Add eggs and vanilla. Mix until smooth and luscious (another 3-4 minutes). Slowly add the flour mixture until combined. Don't over mix. Fold in grated apples and turn into prepared pans.

    Bake 50 to 60 minutes until toothpick comes out clean. Let cool in pans on wire rack 15 minutes. Remove bread from loaf pans and continue to cool on wire rack. When cool, slice and enjoy.
