This recipe was given to my mother by a neighbor in 1957. She said it was copied from an article saying it was Michael Todd's favorite sweets. I think coffee cakes are easy to make and serve at any time. Coffee cake is older than America, brought here by German, Dutch and Scandinavian settlers. By paying a penny in Europe, you could go in the coffee house and listen to the poets and politicians. At first, coffee cakes had the aroma of coffee by adding some to the dough.

Ingredients For michael todd coffee cake

  • 2 c
    flour
  • 3/4 c
    sugar
  • 1 tsp
    baking soda
  • 1 tsp
    baking power
  • 1/4 tsp
    salt
  • 1/2 tsp
    ground nutmeg
  • 1 tsp
    cinnamon
  • 1 c
    milk
  • 1 lg
    egg
  • 1/2 c
    good oil
  • 1/3 c
    orange juice
  • 1 cup c
    dark brown sugar
  • 1 stick
    butter
  • 1 c
    pecans or walnuts, coarsely chopped

How To Make michael todd coffee cake

    Heat oven to 350*. Prepare 9x13 baking pan by spraying or greased with shortening and flour.

    Combine dry ingredients in a medium bowl, flour, sugar, baking power, baking soda, and salt, and spices. in Second bowl, combine 1 egg, 1/2 cup of oil, 1 cup of milk and 1/3 cup or orange juice. gently pour liquids into dry mixture.

    Pour into prepared pan. Crumble together brown sugar, butter, and chopped nuts. Sprinkle over the batter in the pan. Bake in the 350* oven for 30 minutes.

    Topping (optional) Drizzle over warm cake 3/4 cup of powered sugar, 1 tablespoon milk and 1/2 teaspoon vanilla extract, if a topping is desired. Serve warm or warmed.
