Ingredients

3
medium ripe bananas
1 tsp
vanilla extract
1/3 c
brown sugar, lightly packed
1/3 c
sugar
1/2 c
applesauce
1/4 c
canola oil
1/2 c
light sour cream **
2
eggs, beaten
3/4 c
whole wheat flour
1 c
all purpose flour
1 tsp
baking soda
1 tsp
baking powder
**
can use 3/8 cup sour lowfat milk plus 2 tbls. canola oil

Step-By-Step

1Preheat oven to 350 degrees. Spray two 8.5 x 4.25 loaf pans.

2In a large bowl, combine sugars, applesauce, oil, vanilla, sour cream (or sour milk) and eggs.

3Mash bananas and stir into the sugar mixture.

4Add flours and baking soda and baking powder. Stir until just combined.

5Spoon into prepared pans. Bake at 350 degrees for 50-55 minutes. Cool in pans for 15 minutes; remove from pans and cool completely on wire racks.
