Ingredients For chocolate nut loaves

  • 5- 1/2 c
    all purpose flour
  • 1/2 c
    sugar
  • 1 tsp
    salt
  • 2 pkg
    active dry yeast
  • 1 c
    sour cream
  • 1/2 c
    water
  • 1/4 c
    milk
  • 1/2 c
    butter
  • 4
    egg yolks, room temperature (reserve whites for filling)
  • walnut chocolate chip filling (below)
  • butter
  • powdered sugar

How To Make chocolate nut loaves

    Combine 2 cups of the flour, the sugar, salt, and yeast in large mixer bowl; set aside. Combine sour cream, water, milk, and 1/2 cup butter in small saucepan; cook over low heat until liquids are very warm (120-130F). Gradually add to dry ingredients; beat 2 minutes on medium speed. Add egg yolks and 1 cup of the flour, beat 2 minutes on high speed. Gradually stir in enough flour to make a soft dough. When dough becomes difficult to stir, turn out onto well foured board. Knead in enough remaining flour until dough is elastic and forms a smooth ball (about 3-5 minutes). Cover, allow to rest 15 minutes.

    Prepare Walnut Chocolate Chip Filling: Beat reserved 4 egg whites in large mixer bowl until foamy; gradually add 2/3 cup sugar and dash salt, beating until stiff peaks form. Fold in 4 cups ground walnuts (16 ounce bag shelled walnuts) and 2 cups (12 ounce package) semi sweet chocolate mini chips; blend well. Set aside.

    Divide dough into 4 equal pieces. On lightly floured board, roll out each piece of dough to a 10x12 inch rectangle. Spread 1 cup of the Walnut Chocolate Chip Filling on each rectangle to within 1/2 inch of edges. Roll up dough from long side as for jelly roll; pinch edge to seal. Place on greased cookie sheet, sealed edges down, curving rolls for form crescent or spiral shapes. Cover; let rise in warm place until doubled, about 1-1 1/2 hours.

    Bake at 350 for 20 minutes. Loosely cover with aluminum foil; bake 10-15 minutes longer or until golden brown. Remove from oven; brush lightly with butter. Cool completely on wire rack. Just before serving, sprinkle with powdered sugar. Garnish as desired.
