Ingredients For choc-chocolate chip zucchini bread

  • 2 lg
    eggs
  • 1/3 c
    honey
  • 1/2 c
    canola oil
  • 1/2 c
    brown sugar, firmly packed
  • 1 tsp
    vanilla extract
  • 1/2 tsp
    baking soda
  • 1/2 tsp
    baking powder
  • 1 tsp
    salt
  • 1 tsp
    instant coffee granules
  • 1/3 c
    cocoa powder
  • 1 2/3 c
    all purpose flour
  • 2 c
    zucchinie, unpeeled, shredded
  • 1 1/4 c
    semi sweet chocolate chips

How To Make choc-chocolate chip zucchini bread

    Preheat oven to 350 degrees.

    Grease loaf pan and dust with cocoa powder.

    In mixing bowl beat on low speed the following ingredients in order given. Eggs, brown sugar, oil, honey, and vanilla.

    In another bowl mix dry ingredients: salt, baking soda, baking powder, cocoa powder, flour, and coffee granules. Stir with whisk until combined.

    Add dry ingredients to wet ingredients. Mix just until combined. Do not overbeat.

    Add shredded zucchini to mixture. Again, mix just until combined. Do not overbeat.

    Stir in 1 cup of chocolate chips by hand. You can also add nuts here if you like.

    Pour into prepared pan. Top with remaining 1/4 cup chocolate chips.

    Bake at 350 for 55-60 minutes or until done. Test for doneness with a toothpick.

    Remove from oven and let cool 10-15 minutes before removing from the loaf pan. Let cool completely on a wire rack.

    Serve as is or slather with butter, your favorite frosting, cream cheese or whip cream.
