I am copying this right from the recipe card my grandmother wrote for me. What a sweet memory for me of when I was a young bride! How sweet it is to see her handwriting and the note at the top "For Mary Ann". I remember eating these at her house for coffee.

Ingredients For cherry coffee bars

  • 1 c
    butter
  • 1 3/4 c
    sugar
  • 4 lg
    eggs, beaten
  • 1 tsp
    vanilla
  • 3 c
    flour
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 can
    cherry pie filling
  • powdered sugar icing

How To Make cherry coffee bars

    Preheat oven to 350 and grease a jelly roll pan and set aside.

    Sift dry ingredients together and set aside.
  • 3
    Beat butter and sugar until light and fluffy. Add eggs and beat again.
  • 4
    Add dry ingredients and mix together well. Dough will be stiff.

    Spread dough, except for one cup (approximately) into a greased jelly roll pan.

    Top dough with pie filling and then with teaspoons of the remaining dough.

    Bake for 45-50 minutes until done. Check after about 45 minutes or so.

    Remove from oven and cool. Frost with powdered sugar icing as desired. Cut into bars and serve.
