Ingredients

2 c
all purpose flour
1-1/4 tsp
baking powder
1/2 tsp
cinnamon, ground
1/2 tsp
salt
3/4 c
sour cream
3/4 c
sugar (granulated)
1/2 c
canola oil
1 tsp
vanilla extract

SET ABOVE ASIDE. MIX THE NEXT 4 INGREDIENTS TOGETHER

bananas

large eggs
1/2 c
coconut - shredded
1 c
walnuts or pecans

Directions Step-By-Step

combine all ingredients and pour into a sprayed 8.5"x4.5" loaf pan. OR use 3 mini loafs (5-3/4"x3-1/4" each)

Top with 2 Tbsp coconut

Bake at 350* for approximately 55 minutes or until golden brown
(for mini loaves, bake approx. 40 minutes)
