These are very moist. No need to add sugar, the corn sweetens it. I have also added green chiles or chopped jalapenos and cheese.

Ingredients

1 c
self rising buttermilk cornmeal mix
3/4 c
self rising flour
2
eggs, beaten
1/2 c
vegetable oil
1 c
sour cream
1 c
cream style corn

Step-By-Step

1Preheat oven to 375. Grease a muffin tin.

2Mix all ingredients.

3Fill 12 muffin tins 2/3 full.

4Bake for 18-20 minutes
