Single Proofing Wholemeal Fruit Loaf

This is a nice and healthy loaf. It is full of nuts and made with olive oil and whole meal flour. I have used single proofing for this bread and I am pleased with the results. Since it is a healthy bread, my spread is nonfat yoghurt and 2 pieces can easily satisfy my hunger for a few hours. A good alternative for your Christmas day breakfast.
