We love this cornbread with enchiladas, tacos and other Mexican food.

Ingredients

1 c
yellow corn meal
1/3 c
all purpose flour
1/2 c
milk
1/2 c
buttermilk
1 large
egg
2 Tbsp
corn oil
1 Tbsp
sugar or splenda
1/2 tsp
baking powder
1 1/2 Tbsp
diced red bell pepper
1 1/2 Tbsp
chopped, pickled jalapenos
1 1/2 Tbsp
whole kernel corn

Step-By-Step

1Preheat oven to 425 degrees.
2In a large bowl, ahisk together milk, buttermilk, oil, egg sugar, salt and baking powder.
3Add cornmeal and flour. Mix well.
4Stir in corn, jalapenos and bell pepper.
5Pour into a greased baking pan or greased cast iron skillet.
6Bake for 15 minutes or until done.
