Apple Nut Bread

Ingredients

2 c
flour
11/2 tsp
baking powder
1/2 tsp
baking soda
1/2 tsp
salt
1 1/2 tsp
cinnamon
2
eggs
1 c
sugar
2/3 c
oil
1/3 c
milk
1 tsp
vanilla
2 c
chopped apples
1/2 c
chopped walnuts
2 Tbsp
shredded coconut (optional)
3 Tbsp
sugar
1 tsp
cinnamon

Step-By-Step

1Sift together dry ingredients. Set aside.
2Combine eggs, sugar, oil, milk and vanilla in a large bowl.
3Add flour mixture; mix gently.
4Fold in apples, nuts and coconut.
5Spoon into lightly greased 9 X 5 inch pan.
Sprinkle top with 3 tbsps. sugar and 1 tsp. cinnamon, which have been mixed together.
6Bake 60 minutes at 350 degrees.
7Cool in pan on wire rack 10 minutes.
Remove from pan and cool completely on rack.
8Mix by hand to avoid overmixing and to insure a tender, moist loaf.
