Ingredients For pecan raisin muffins

  • 1 3/4 c
    flour
  • 1/4 c
    sugar
  • 1 Tbsp
    baking powder
  • 3/4 tsp
    salt
  • 1/3 c
    margarine
  • 1/2 c
    chopped pecans
  • 1/3 c
    dark seedless raisins
  • 1
    egg
  • 3/4 c
    milk

How To Make pecan raisin muffins

  • 1
    Mix flour, sugar, baking powder, and salt. Cut in margarine until mixture resembles coarse meal. Mix in pecans and raisins. Beat together egg and milk; add all at once to dry mixture.

    Stir lightly to dampen dry ingredients. Fill 12 greased muffin cups about 3/4 full. Bake at 400 for 15 to 20 minutes.

    For Bacon Cheese Variation: Substitute 1/2 cup grated cheddar cheese and 1/3 cup crumbled cooked bacon for pecans and raisins.
