These are tasty little muffins. Slight tweaking. Don't recall where I found the recipe.

Ingredients For peanut butter mini muffins

  • 1 3/4 c
    unbleached all-purpose flour
  • 2/3 c
    packed brown sugar
  • 2 1/2 tsp
    baking powder
  • 1/4 tsp
    salt
  • 1 lg
    egg
  • 3/4 c
    2% milk
  • 2/3 c
    plain or chunky peanut butter
  • 1/4 c
    vegetable oil
  • 1 1/2 tsp
    spice islands, all natural, no corn syrup added, pure vanilla extract
  • 2/3 c
    miniature semisweet chocolate chips
  • note: take out chocolate chips for plain peanut butter muffins. to enhance the peanut flavor, use peanut butter chips.
  • note: twelve regular-size muffin cups may be used; bake 22-25 mins.
  • note: reduced fat or generic brands of peanut butter are not recommended for this recipe.

How To Make peanut butter mini muffins

    Preheat oven to 350°F. Grease mini cupcake tin or use paper liners.

    In a large bowel, combine 1st four ingredients. In another bowl, whisk the next five items. (Peanut butter takes a long time to incorporate into egg/milk mixture.) Stir into dry mixture, just until moistened. Fold in choc. chips.

    Fill prepared mini muffin cups two-thirds full. Bake in preheated oven for 15-17 mins., or until they test clean with a toothpick. Cool 5 mins., before removing from pans to wire racks. Serve warm. Makes 4 dozen.
