Lemon Date Muffins - Healthy

These are very tasty and the muffins were a hit with the family... I thank my grandma for this recipe, God bless her... my mom saved this recipe for me along with many others. I hope you enjoy these.
I love the texture of these muffins and I have made them with other fruit that has been dried and fresh fruit and nuts as well... I even make them with Trail Mix once (just chop it up first and dust with flour).

Notes from the Test Kitchen:
I loved the date and lemon flavor combination in these muffins. Can't wait to have another one along with my morning coffee! A great way to start the day.


2 c
all purpose flour
1/3 c
dark brown sugar, packed
1 tsp
each of baking powder and baking soda
a pinch
of salt
3/4 c
Dairy sour cream
3/4 c
packaged pre-cut dates
2 Tbsp
melted butter
3 Tbsp
lemon juice
1 Tbsp
grated lemon rind
1 large

Directions Step-By-Step

Preheat oven to 400^. Place cupcake papers in a muffin pan (cupcake pan). Spray papers with non-stick spray. Set aside.
Combine the flour, brown sugar, baking powder, baking soda and salt in a medium bowl; mix to blend.
In a separate medium bowl combine remaining ingredients. Mix well to combine. Add this to the flour mixture; batter will be dough-like.
Divide batter in half in the bowl, then 1/2 again (makes it easier to evenly distribute). This should fill the paper cups to the top.
Bake for 25 minutes - testing with a wooden toothpick.
Cool completely. Eat as is or you can frost with:
1 cup powdered sugar
1 teaspoon soft margarine
and enough lemon juice to make spreadable
