Maybe the use of mayonnaise in this recipe seems strange, but I promise, it makes for a fluffy, delicious muffin! Make sure to use real, full-fat mayonnaise, not low-fat or Miracle Whip.

Ingredients

3 large
bananas
2/3 c
white sugar
1 c
mayonnaise
2 c
all-purpose flour
1 1/2 tsp
baking soda

Directions Step-By-Step

Preheat oven to 375F.

Put peeled, mashed bananas in bowl with sugar and mix until creamed.

Add mayonnaise, mix in until incorporated.

Sift baking soda and flour together, add to wet mixture and mix until all ingredients are moistened.

Fill greased muffin tins to the top, baking 15-20 minutes, or until a toothpick comes out clean.
