Favourite Banana Muffins
Maybe the use of mayonnaise in this recipe seems strange, but I promise, it makes for a fluffy, delicious muffin! Make sure to use real, full-fat mayonnaise, not low-fat or Miracle Whip.
- 3 large
- 2/3 c
- white sugar
- 1 c
- 2 c
- all-purpose flour
- 1 1/2 tsp
- baking soda
1Preheat oven to 375F.
2Put peeled, mashed bananas in bowl with sugar and mix until creamed.
3Add mayonnaise, mix in until incorporated.
4Sift baking soda and flour together, add to wet mixture and mix until all ingredients are moistened.
5Fill greased muffin tins to the top, baking 15-20 minutes, or until a toothpick comes out clean.
