Ingredients For cinnamon apple muffins

  • 1 1/2 c
    quick cooking oats
  • 1 1/2 c
    boiling water
  • 1 c
    whole wheat flour
  • 1/2 c
    all purpose flour
  • 3/4 c
    unpacked brown sugar
  • 1 1/2 tsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    ground cinnamon
  • 1/4 c
    each honey and unsweetened applesauce
  • 2
    egg whites
  • 3 Tbsp
    butter or margarine, melted
  • 1 tsp
    vanilla extract
  • 1 1/2 c
    peeled, cored, and finely chopped apples
  • cinnamon sugar to sprinkle on top

How To Make cinnamon apple muffins

    Preheat oven to 325.
  • 2
    Pour boiling water over oats in a medium bowl. Stir and let stand for 20 minutes.

    Combine flours and next 5 ingredients in a large bowl. Set aside.

    In a small bowl, whisk together honey, applesauce, egg whites, butter and vanilla. Add applesauce mixture to oats and stir until smooth. Add oat mixture to flour mixture and stir until dry ingredients are moistened. Fold in chopped apples.

    Spray large muffin tin with nonstick spray. Divide batter among 12 muffin cups. Sprinkle each muffin lightly with cinnamon sugar, if desired. Bake for 25 minutes, or until wooden pick inserted in middle comes out clean. Remove from pan and let cool.
