Banana Crumb Muffins
These are really good. You can add chopped walnuts or pecans. Also to the cinnamon lovers, you can add a little cinnamon to the batter also.
- 1 1/2 cups all purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 3 large ripe bananas; mashed
- 3/4 cup sugar
- 1 whole egg; lightly beaten
- 1/3 cup butter; melted
- 1/3 cup brown sugar
- 1 tablespoon all purpose flour
- 1/8 teaspoon ground cinnamon
- 1 tablespoon butter
1In a large bowl combine dry ingredients. Combine bananas, sugar, egg and butter and mix well. Stir into dry ingredients until just moistened.
2Fill greased or paper line muffin cups 3/4 full.
3Combine 1st three topping ingredients and cut in butter until crumbly and sprinkle over muffins.
4Bake at 375 degrees for 18 - 20 minutes or until test done. Cool in pan 10 minutes before removing.
