Ingredients

2 1/2 c
chickpea or garbanzo flour
3 1/2 c
cold water
salt
pepper
1/4 c
olive oil, extra virgin

Directions Step-By-Step

Place flour in a bowl. Whisk flour while adding water to prevent lumps. Whisk until smooth. Let sit on counter about 3 hours.

Preheat oven to 350 degrees. Pour olive oil into large rimmed cookie sheet. Don't skimp on the oil. Pour batter onto sheet to about 1/4" thick.

Bake 30 minutes. Let cool a few minutes before cutting. Good served with pesto or parmesan. To rewarm leftovers, broil a few minutes.
