Best Ever Mashed Potatoes

As the recipe title suggest, these are simply the best ever mashed potatoes. Left overs are rare.

2 1/2 Lbs Potatoes, peeled (cut into chunks)
4 oz Cream cheese
1/4 C Milk
1/4 C Butter (softened)
1/4 C diced chives (or 4 scallions, sliced thin)
1 tsp Salt
1/4 tsp Black pepper

Directions Step-By-Step

Place potato chunks in a soup pot and add just enough water to cover. Bring to a boil over high heat and cook 20 to 25 minutes, or until tender. Drain well and return potatoes to the pot for 1 to 2 minutes more with the heat on to make sure all of the remaining water is gone. Add remaining ingredients and beat with an electric mixer until smooth and creamy. Serve immediately.
