Zucchini pie

This is my most asked for recipe to bring to someone's house. I don't know why it is called zucchini pie when you make it in a 9x13 inch pan, but I don't argue with greatness. You can easily cut this recipe in half, but I don't think you will want to. You can use this as an appetizer, just cut it in small squares or you can use it as a side dish. I always have this on Thanksgiving and for summer graduation, or birthday parties

eggs, beaten
3 c
zucchini, shredded
1 small
onion, shredded
1/2 c
grated parmesean cheese
1/2 c
mozzarella cheese, shredded
1/2 c
cheddar cheese, shredded
1/4 c
olive or vegetable oil
salt and pepper to taste
1 c
2 Tbsp
parsley, chopped

Directions Step-By-Step

Preheat oven to 350. Grease a 9x13 pan. In a large bowl, mix all the ingredients together.
Bake 35-40 minutes, until golden and it springs back when touched.
Cut into squares. Can be served warm or room temp.
