Our son and his wife are vegetarians so I am always challenged to come up with new things for them. I made these as an appetizer and everyone loved them. They freeze well also and are wonderful for breakfast.

Ingredients For zucchini appetizers

3 cthinly sliced uncooked zucchini (about 4 small)

1 cbisquick baking mix

1/2 cfinely chopped onion

1/2 cgrated parmesan cheese

2 Tbspparsley flakes or fresh snipped

1/2 tspsalt
-
1/2 tsporegano, dried
-
1 clovegarlic finely chopped

1/2 cvegetable oil
-
4eggs, slightly beaten
-
dash of pepper
How To Make zucchini appetizers

1preheat oven to 350 degrees. Grease 13X9 pan. Mix all ingredients, spread in pan.

2Bake until golden brown, about 25 minutes. Cut into pieces. Enjoy!
