Ingredients

1 sheet(s)
frozen puff pastry
flour for rolling
olive oil for brushing
1/2 c
grated white cheddar cheese
4-5
italian plum tomatoes, sliced 1/4 inch slices
salt and ground pepper
2 Tbsp
fresh thyme leaves, chopped fine
1/2 c
freshly grated parmesan cheese

Step-By-Step

1Preheat oven to 400.
2Remove puff pastry from freezer and let thaw for 20 minutes.
3Roll out pastry, using flour to prevent sticking to board, to fit tart pan. Lay in tart pan and brush lightly with olive oil.
4Top pastry with cheddar cheese, tomato slices and salt and pepper. Sprinkle thyme leaves and Parmesan cheese over top. Bake 15-20 minutes or until done. Cool before slicing and serving.
