Add greens to a stockpot, cover with water & season to taste. Bring to rolling boil on high, adjust to medium heat; continue to cook for 4 hrs. Let greens cool & drain all liquid from pot. Add cheddar cheese, onions, crumbled bacon & jalapeno peppers to cooled greens & mix. Roll ingredients into 1" balls & roll in 2 c. flour. Refrigerate.
Combine garlic, pepper & remaining 2 1/2 cups flour. In a bowl mix 2c. milk, 1/2 c. buttermilk & 1 egg as milk wash. Dip balls in milk wash and then seasoned flour. Drop into deep fryer for 3 min. or til golden brown. Serve with ranch dipping sauce.
