Shake'N Bake Oven Fried Green Tomatoes

- green tomates, sliced
- 8.5 oz. box
- jiffy corn muffin mix
- 1 pkg
- of shake'n bake parmesan crusted flavor seasoning
- 1/2 tsp
- salt and pepper
- eggs, beaten
1Preheat oven to 400. Spray a cookie sheet with cooking spary
2In a medium bowl add the muffin mix and the shake'n bake; stir to combine.
3Stir in the salt and pepper.
4In another bowl add the eggs and beat them.
5Dip each tomato slice in egg, then muffin mixture.
6Lay tomatoes on cookie sheet and bake 15 minutes pre side.
