I made these for a PTA function a couple years ago. They went so fast and I was asked for the recipe a great deal. So I thought I would share it here. You can also just make it as a wrap for yourself.

Ingredients For pinwheel appetizers

  • 3 c
    cooked wild rice
  • 1 pkg
    8 ounces cream cheese
  • 1/3 c
    grated parmesan cheese
  • 1 tsp
    dried parsley
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    dijon mustard
  • 3
    drops hot sauce
  • 3
    12 inch flour tortillas
  • 2 1/2 oz
    sliced corned beef
  • 9
    fresh spinach leaves
  • SERVE WITH
  • hot sauce
  • your favorite salsa

How To Make pinwheel appetizers

  • 1
    Combine wild rice, cream cheese, parmesan cheese, parsley, garlic powder, mustard, and pepper sauce in a small mixing bowl.

    Spread evenly over tortillas, leaving a 1/2 inch border on one side of each tortilla.

    Place a single layer of corned beef over rice and cheese mixture.

    Top with a layer of spinach.
  • 5
    Roll each tortilla tightly toward your 1/2 inch border. Moisten the border with a little bit of water and press to seal your roll.

    Wrap it tightly in plastic wrap and refrigerate for several hours or over night.

    Cut into 2 inch slices to serve. Makes about 36
