I love onions and love Vidalia onions even more. I can't begin to tell you how many onions we go through in a week of cooking at my house.

Ingredients

3 c
onions, vidalia, peeled, chopped
2 1/2 c
mayonnaise
3 c
swiss cheese, shredded
cayenne pepper

Step-By-Step

1Preheat oven to 350-degrees.

2Combine the onion, mayonnaise and Swiss cheese in a medium bowl. Mix well and transfer to a greased 1 quart baking dish.

3Sprinkle with cayenne pepper. Bake, uncovered, for about 30 minutes, or until hot and bubbly. Serve with a large dipping or other sturdy chips.
