This can be used for many things, such as a light dinner,an appetizer, or a snack when dinner will be served much later then you like. Ever since I had my stomach surgery, I seem to enjoy this vegetable cooked like this!
If you love stewed zucchini you will surely be a fan of this italian gem!

Ingredients

baby green zucchini sliced lengthwise
1 can(s)
redpack crushed tomatoes
1 2/3 c
whole milk ricotta
1/2 c
shredded mozzerella
1
handful grated parm
few dash(es)
red cross salt
few dash(es)
onion flakes
few dash(es)
onion powder
few dash(es)
parsley, dried
few dash(es)
oregano, dried

Step-By-Step

1slice lengthwise and gut 2 baby green zucchini
make into boat shape cut off both ends and lightly salt
2put red pack tomatoes in bottom of a baking pan
salt to desired taste
add a pinch of white sugar if tomatoes have too much
acid
3mix all cheeses together and spoon generously in boats
sprinkle seasonings around boats
heat on 400 degrees for 50-60 minutes
