    english cucumbers-long and narrow
  • 1 ( 8 ) oz
    softened cream cheese
  • 1/4 c
    salad dressing
  • 3/4 tsp
    drid dill

How To Make creamy english cucumber bites

    In a small bowl combine softened cream cheese, miracle whip , onion, and dill. Using a mixer cream together till light and fluffy, about 2-3 minutes. Place in refrigerator while preparing cucumbers, this will allow the cream cheese mixture to firm up a little. Peel cucumbers lengthwise leaving 4 or 5 strips of the cucumber skin,cut off ends. Slice cucumbers into 1/2 inch slices, you want to make sure to cut them straight, remove the centers of each slice. Place cucumbers on a plate lined with a sheet of paper toweling, this will allow you to absorb some of the moisture from the cucumber slices. Refrigerate for about 15 minutes. Using a pastry bag fill the centers of the cucumber with the cheese mixture. Top with a garnish like a piece of red or yellow pepper, a sprig of dill, even a piece of bacon. Refrigerate for at least a half hour before serving so that the cheese mixture can firm up nice and stiff but still creamy.
