A neighbor of mine from many years ago gave me this recipe its great for anytime. Appeitier, snack, pinic, sidedish or entree with a nice salad.

Ingredients

3/4 c
all purpose flour
1 1/2 tsp
baking powder
9
eggs
4 c
shredded monterey jack cheese
2 c
1% low fat cottage cheese
2 can(s)
(4ounces each) diced chilies, drained
1 1/2 tsp
sugar
1 tsp
salt
1 tsp
hot sauce
1 c
prepared salsa

Step-By-Step

1Preheat oven to 350F. Spray 13x9-inch baking dish with nonstick spray.

2Combine flour and baking powder in a small bowl.
Whisk eggs in a large bowl until blended;stir in monterey jack,cottage cheese,chiles, sugar, salt and hot sauce. Add flour mixture; stir just until blended. Pour into prepared dish.

3Bake uncovered, 45 minutes or until set. Let stand 5 minutes before serving.
