Celery gets a bad rap from me, as about the only time I use it is for salads, soups or stuffing. Never do I just pick up a stalk and eat it, unless its stuffed with this delicious cheese spread. Always a hit, when I make them for a get together. This is a very old recipe of my grams. I hope you try them sometime and they might make a celery lover out of you too!

Ingredients

Celery
hearts, trimmed, washed and dry
8 ounces
shredded american cheese or velveeta
1 can(s)
evaporated milk
1
egg, beaten
1 Tbsp
flour
1 tsp
vinegar
4 Tbsp
pimentos

Step-By-Step

1In a medium saucepan, over medium heat, stir the cheese and milk together. Keep stirring so not to scorch. Once cheese starts melting, I whisk it to smooth out any unmelted cheese. Once cheese is melted, whisk in the flour and egg. Keep whisking until thickened.
2Remove from heat and stir in pimento and vinegar.

Cool until slightly warm, then spread onto celery, can then cut into individual serving pieces.

At times I sprinkle with crumbled bacon, for a change.
