Asparagus with Wasabi-Mayonnaise Dip

Ingredients

3 lb
asparagus trimmed (thin to medium)
1 c
mayonnaise
4 tsp
soy sauce
1 1/2 tsp
sugar
2 tsp
fresh lemon juice
2 tsp
wasabi paste

Step-By-Step

1Blanch asparagus in 2 batches in a large saucepan of boiling salted water 1 minute.

2Transfer to a colander and rinse under cold running water to stop cooking.

3Drain well and pat dry.

4Whisk together mayonnaise, soy sauce, sugar, lemon juice, and wasabi paste until sugar is dissolved.

5Serve asparagus with dip.

6Note:
Asparagus and dip may be prepared 1 day ahead and chilled, covered.
