smoked salmon and cream cheese stuffed cucumbers

These are eazy and quick and travel very well.I think I got this recipe from Sandra Lee on Food Net Work.I use these a lot during the holidays and for parties.

Ingredients For smoked salmon and cream cheese stuffed cucumbers

  • 4-cucumbers
  • 8 oz of cream cheese(softened)
  • 8 oz of sour cream
  • 3 oz package of smoked salmon (chopped)
  • 1 shallot diced or the white bulb of a green onion
  • 1/2 lemon ,juiced with seeds removed
  • salt and pepper to taste (watch the salt)

How To Make smoked salmon and cream cheese stuffed cucumbers

    Using a peeler,create stipes on the outside of the cucumbers by peeling along the length of the cucumbers ,leaving every other section intact.Cut off the ends of the cucumbers and slice into 1 inch rounds.Using a mellon baller ,scoop out the seeds and the inner flesh from 2/3 of each cucumber slice.DO NOT SCOOP ALL THE WAY THRU.Set aside

    In a bowl combine equal parts cream cheese and sour cream.Mix in the chopped salmon ,the diced shallots,lemon juice,salt and pepper,combing throughly.Tranfer the mixture to a pastry bag with a 8 star tip.Pipe the filling generously into each cucumber slice...I sometimes garnish with a sprig or parsley or dill if I have it.

    Personal note: I often use a small zip lock bag to pipe the filling in ,just cut off a small end of a corner of the bag and pipe the filling in that way .....I buy the smoked salmon in the seafood area where they keep the imatation crab meat....For a large group I double or triple this recipe...I have use chopped shrimp or chopped inmation crab meat for this recipe instead of the salmon
