Ingredients
| 2 lb | cooked medium shrimp |
| 1 md | red onion sliced & separated into rings |
| 2 md | lemons, sliced |
| 1 c | pitted ripe olives |
| 1/2 c | olive oil |
| 1/3 c | minced fresh parsley |
| 3 Tbsp | red wine vinegar |
| 3 Tbsp | lemon juice |
| 1 clove | garlic minced |
| 1 | bay leaf |
| 1 Tbsp | fresh minced basil |
| 1 tsp | ground mustard |
| 1/4 tsp | black pepper |

Directions
In a 3qt. glass serving bowl, combine the shrimp, onion, lemons & olives. In a jar with a tight fitting lid, combine remaining ingredients; shake well, pour over shrimp mixture and stir gently to coat. Cover & refrigerate for 24 hrs.stirring occasionally. Discard bay leaf before serving
