Ingredients For frituras de bacallao (cod fish fritters)

1 lbsalted cod

2 cflour
-
1 1/2 cwater

1 smfinely chopped onion

1/2 tspbaking powder
-
1/2 cchopped parsley
-
1 pinchyellow food coloring (bijol)

1egg
-
1 cvegetable oil
How To Make frituras de bacallao (cod fish fritters)

1soak the salted cod fish to get rid of the salt. add fresh water to a pot and boil for 30 mins. drain, and add fresh water and boil again 15 mins.

2meanwhile, in a large bowl, mix together the rest of the ingredients...to the consistency of a batter.

3flake the cod and add to mixture...let stand in refrigerator at least 1 hour.

4add the vegetable oil to a pan, on med-high...add spoonfuls of the mixture, do not overcrowd the pan, treat as you would a pancake, when it bubbles up a bit, turn over till lightly golden brown.
