Crab Meat Butter

- 1 cup butter, 2 sticks
- 32 oz. cream cheese
- 2 lbs lump crab meat, flaked and cooked
1Melt the butter and cream cheese in a double boiler, stirring to mix well. Fold in the crab meat. Serve in a chafing dish with crackers or chips. You may also spread this on English muffins land top with a poached egg and Hollandaise sauce as a substitute for the Canadian bacon for a coastal version of eggs Benedict. Makes 8 cups.
