Genovese Wings, Pesto Chicken Wings

I had entered this recipe in a wings contest. Not sure if it got picked, but it was so good. The pesto baked in is killer.

Ingredients

10 pkg
chicken wings
2 c
all purpose flour
2 large
eggs
2 Tbsp
water
3 Tbsp
soul food seasoning
3 sprig(s)
thyme, leaves
1 sprig(s)
rosemary sprigs
4 oz
pesto
2 sprig(s)
parsley
2 tsp
salt and pepper
3 c
veg oil
3 Tbsp
duck fat

Step-By-Step

1Marinate chicken with thyme, rosemary, salt, pepper, soul food seasoning, and a little pesto. Marinate for 1 1/2 hours
2In a bag put flour and a bit of seasoning. Add water to egg. Dredge chicken in egg then flour.
3Heat veg oil and duck fat together until hot. Fry chicken for 5-8 mins each side, until golden brown
4Place chicken on baking sheet and brush with pesto ad season with salt and pepper
5Bake for 10-15 mins. Sprinkle chopped parsley. ENJOY!!!
