Marinate chicken with thyme, rosemary, salt, pepper, soul food seasoning, and a little pesto. Marinate for 1 1/2 hours
In a bag put flour and a bit of seasoning. Add water to egg. Dredge chicken in egg then flour.
Heat veg oil and duck fat together until hot. Fry chicken for 5-8 mins each side, until golden brown
Place chicken on baking sheet and brush with pesto ad season with salt and pepper
Bake for 10-15 mins. Sprinkle chopped parsley. ENJOY!!!
