This is my "go to " chicken salad recipe for any party or get together; deli-style.

Ingredients

3 c
cooked chicken , shredded then chopped
1/2 c
finely diced celery
1/2 c
water chestnuts, rinsed and drained, then diced
1/4 c
red bell pepper, diced
1/4 c
yellow bell pepper, diced
1/4 c
chopped red onion
1 1/2 c
miracle whip salad dressing or mayonnaise(more or less to make moist)
1 pinch
ground red pepper, or to taste
1/4 tsp
each salt and white pepper

Directions Step-By-Step

Shred the chicken(about 3 cups)..
Combine chicken. celery, water chestnuts, and the next 3 ingredients in a large bowl.

Stir together the salad dressing, ground red pepper, salt and pepper until well blended; spoon over the chicken mixture, stirring to coat. Cover and chill at least 4 hours.

Note: Can use cooked salad shrimp in place of the chicken.
