I sincerely hope that I never get tired of chicken, because there are so many things that you can do with this versatile bird.

In this case we’re talking wings… but not just any wings. We’re going to rub ‘em, rest ‘em, and smoke ‘em.

What could go wrong?

chicken wings
3 Tbsp
dry poultry rub, your choice
dipping sauce, your choice

Gather your ingredients.

Place the chicken wings in a Ziploc bag, along with the poultry spice.

Seal and shake the bag to distribute the spices.

Place in the fridge and allow the wings to rest for 2 hours, or overnight.

Soak some wood chips in water (I’m using hickory).

Fire up your smoker, and get it up to 250f (120c).

Chef’s Note: For these wings, I’m using one of my Master Built smokers.

Place the wings on a rack, and add them to the smoker.

Smoke the wings for about 1.5 to 2 hours, or until the internal temperature reaches 165f (75c).

Choose your favorite dipping sauce, put them on a plate, and stand back. Enjoy.
