This dip is really good with Tostitos scoops or your favorite cracker. My son didn't like any of these ingredients until he tried this combination. You may also substitute black beans for a can of pinto beans. (It is also called Cowboy Caviar or Texas Caviar).

Ingredients For redneck caviar

  • 1 can
    blackeyed or purple hull peas, drained
  • 1 can
    black beans, drained and rinsed well
  • 1 can
    shoepeg corn, drained
  • 1 can
    diced tomatoes with jalapeno peppers (Rotel), drain some of juice off
  • 1 can
    diced tomatoes, drained
  • 1
    chopped bell pepper (1/2 green pepper and 1/2 red pepper is really pretty)
  • chopped onion to taste (you can used a few green onions and some sweet onion or you may like chopped red onion, whatever your preference
  • 1 or 2
    chopped jalapeno peppers, with insides removed (be careful they will cause skin to burn when removing insides)
  • chopped fresh cilantro, to taste, about 1/2 cup
  • sugar to taste, about 2-3 Tablespoons
  • 1 bottle
    Zesty Italian dressing
  • 1 tsp
    minced garlic

How To Make redneck caviar

  • 1
    Put beans, peas, and corn in container with tight fitting lid. Add tomatoes and Rotel. Chop and add rest of ingredients. Pour Italian dressing over, marinate a few hours or overnight. Keep refrigerated.
