These are great with a little salsa added before the sour cream. Makes a great party appetizer or even a light meal when served with a salad. Kids love these too!

Ingredients For potato skins stuffed with cheese & bacon

  • 5
    baking potatoes
  • 1/2 c
    shredded cheddar cheese
  • 1/2 c
    shredded jack cheese
  • 5 slice
    bacon, cooked crisp and crumbled
  • 2 Tbsp
    green onion finely chopped
  • sour cream for topping

How To Make potato skins stuffed with cheese & bacon

    Bake potatoes @ 500 degrees for 1 hour or until fork tender. Cut potatoes in half and scoop out centers, leaving a 1/4" thick shell. Cook skins in hot oil (400 degrees) or 400 degree oven if you don't want to fry until slightly crisp and golden brown. If frying, drain well on paper towels. Season to taste with salt and pepper. Fill each potato half with some of the crumbled bacon, green onion, and both cheeses. Place under broiler to melt cheese. Top each with a dollop of sour cream. Yields 10 servings
