Mini Tortillas

Great if you need an appetizer that feeds a larger group. Just double the recipe

8 oz
light cream cheese
8 oz
light sour cream
scallions with tops, chop fine
4 oz
can of chopped green chiles
2 Tbsp
chopped black olives
1 c
sharp finely shredded cheddar cheese
1 pkg
of flour tortillas (i use the low carb)
1/2 jar(s)
picante sauce (medium)


1Mix the cream cheese, sour cream, scallions, green chiles, olives and cheese. Spread the mixture on a flour tortillas and roll up. Wrap the tortillas in damp paper towels and place in plastic storage bags. Chill. To serve, cut tortillas into 1 inch pieces. Place on a tray with a bowl of picante sauce and toothpicks.
2If you would like a little heartier appetizer, I have added 2 slices of very thinly sliced ham or salami to each tortilla.
