Ingredients For mediterranean marinated olives

4 cassorted brine-cured olives (such as kalamata, picholine, lucques, and niçoise), rinsed, drained

1/2 colive oil

6fresh thyme sprigs

6whole star anise

4 lggarlic cloves, peeled, flattened

2fresh rosemary sprigs

2bay leaves
-
2cinnamon sticks
-
1 Tbspcoriander seeds, coarsely cracked

1 tspdried crushed red pepper, optional

1/4 tspground allspice
How To Make mediterranean marinated olives

1Place olives in medium bowl. Combine oil and all remaining ingredients in heavy medium saucepan and bring to simmer over medium-high heat. Pour oil mixture over olives, cover and chill at least 3 days and up to 1 week.

2Bring olives to room temperature. Using slotted spoon, transfer olives, herbs, and spices to a serving bowl. Pour over enough oil from marinade to coat.

3Serve and enjoy.
