I have never liked fruitcake even though my mother would give me one every year! I decided to try to come up with a recipe that would incorporate the fruitcake idea into a more edible cake-like compotent for an appetizer for my Christmas parties. This seems impossible but true - a fruitcake that tastes very good!

Ingredients For impossibly good fruitcake miniatures

  • 1 1/2 c
    flour, all purpose
  • 1 1/2 c
    sugar
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 6 lg
    eggs, beaten
  • 3 tsp
    vanilla
  • 1 lb
    fruit mix, candied
  • chopped pecans - as desired

    Preheat oven to 325 degrees. Line small(midget) cupcake pan with liners. Combine all ingredients; mix thoroughly. Spoon approximately 1 heaping teaspoon into baking cup liners.

    Bake between 20-25 minutes or until wooden pick inserted in center comes out clean. Cool completely. Wrap securely in plastic wrap or aluminum foil; store in refrigerator.
