The first time I made this a couple of years ago, I wondered how this was going to turn out. It turned out good the first time, and then every time after that. I love it, and I hope you will too.

Ingredients For hot and spicy hush puppies

  • 1 c
    yellow cornmeal
  • 3/4 c
    self-rising flour
  • 1 tsp
    salt
  • 1/2 tsp
    sugar
  • 1/2 tsp
    cayenne pepper
  • 1/2
    small, sweet onion, finely chopped
  • 1/2
    jalapeno, finely chopped
  • 4
    green onions, sliced thin
  • 1
    large egg, beaten
  • 1/4 c
    grated cheddar
  • 1 c
    buttermilk

How To Make hot and spicy hush puppies

    Preheat deep fryer to 375 degrees F. (If you don't have a deep fryer, you can use a cast iron skillet, or a deep-sided electric skill or even a pot with oil, just check the temperature of the oil with a thermometer)

    Mix all the ingredients together into a large mixing bowl to form a thick batter.

    Dip 2 tablespoon spoons into water. Using the spoons scoop up some of the batter and drop into the hot oil. ( You can skip this part if you want, and just use a flatware tablespoon and scoop the batter into the oil).

    Work in batches. Fry for 3 to 4 minutes or until golden and brown. Remove and drain on a paper towel lined sheet tray.

    *Note* You don't have to add the jalapeno unless you want to. It will still taste good with the other ingredients.
