(15 oz) white corn
1 can(s)
(15 oz) yellow corn
1 can(s)
(15 oz) black beans
1 can(s)
(15 oz) black eyed peas
1 can(s)
ro-tel diced tomatoes with chilies or kick it up a notch using the ro-tel tomatoes with habaneros
1 c
diced cucumbers
1/2 c
sliced scallions


1/3 c
olive oil
2 Tbsp
red wine vinegar
1/2 tsp
diced garlic
2 Tbsp
dried parsley
1 tsp
1/4 tsp
dry mustard

Directions Step-By-Step

Drain and rinse corn, beans and peas. Mix all ingredients in large bowl.
In a small bowl whisk together all dressing ingredients. Add dressing to vegetables, stir, cover and refrigerate. Serve as a salsa with tortilla chips. Can also be eaten as a side dish.
