tostidos scoops
your favorite cornbread salad (i used catherine cedillo's mexican cornbread salad recipe on this site and it was perfect)
you favorite toppings - sliced jalapenos, shredded cheese, chopped tomatoes, sour cream, etc.

This is a great little appetizer or just for a little snack. Use your favorite toppings and enjoy.

 

Directions

1
Make your favorite cornbread salad and let set overnight to infuse flavor into the salad. Put about a teaspoon of cornbread salad into a Tostito scoop and top with your favorite topping/s.

Jane, I had never eaten it until my daughter made some and it is yummy. There are several recipes for cornbread salad on this site. The recipe I used was the one linked above because I was having Mexican food. The Tostito Scoops are made by Frito-Lay.

I wish one of you that make cornbread salad lived near me and called me over to taste it when you make it! I just can't get it in my head of putting tomato in cornbread and especially the mayo part..but I have heard from other people outside of JAP that this dish is sooo good. Guess the only way to find out for myself is to make some cornbread salad!! LOL Now I love mexican cornbread !! LOL

Shirley, althought the concept doesn't sound good, the result is. I consider it a comfort food (the salad) & then you put it on a chip & I'm there!

Yes, there is something really special about the taste of tomato, cornbread, basil and that decadent fontina cheese.....okay, time for me to make this again! lOL!
