Cornbread Salad Cups

This is a great little appetizer or just for a little snack. Use your favorite toppings and enjoy.

Ingredients

tostidos scoops
your favorite cornbread salad (i used catherine cedillo's mexican cornbread salad recipe on this site and it was perfect)
you favorite toppings - sliced jalapenos, shredded cheese, chopped tomatoes, sour cream, etc.

Directions Step-By-Step

Make your favorite cornbread salad and let set overnight to infuse flavor into the salad. Put about a teaspoon of cornbread salad into a Tostito scoop and top with your favorite topping/s.

Donna, That salad is so beautiful and when I posted pics on FB everyone wanted the recipe. Most of us Northerners (Ohio and PA) hadn't tried the Mexican Cornbread Salad before and along with the tostido cups it was over the top! :-) (The third time I made it, I almost didn't let anyone eat it. I told them they could just look at it but weren't allowed to eat it) LOL --- I caved in of course, and let them dig into it. hehe
