This recipe is a very tasty and different spin to egg rolls. My family is Filipino so egg rolls have been in the family for years. My mother makes hers a bit different but she always told me you can literally put whatever you want in your egg rolls. So after playing around I came up with this recipe which turned out to be delicious. I am always asked to make this. You will love it too!

These Southwest egg rolls are jam-packed full of flavor and yumminess. Black beans and spices add to their Southwest feel. Corn is a nice balance and adds a pop of sweetness. These egg rolls are baked, not fried, and get slightly crisp on the outside. Put them on a platter with your favorite dip and watch them disappear.

Ingredients For southwestern egg rolls

  • 1 lb
    ground beef
  • 2 c
    corn (canned or frozen if thawed)
  • 1 can
    black beans, rinsed and drained (15 oz)
  • 10 oz
    frozen spinach, thawed and squeezed dry
  • 1/2 c
    shredded cheddar cheese (or cheese of your choice)
  • 1 can
    green chiles, drained (4 oz)
  • 1 c
    chopped green onions
  • 1/4 c
    chopped cilantro
  • 1 tsp
    ground cumin
  • 1/2 tsp
    chilli powder
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 1/4 tsp
    cayenne red pepper
  • 1 pkg
    egg roll wrappers (or more if you need them)
  • 2
    eggs, beaten
  • 1/2 c
    olive oil or any oil

How To Make southwestern egg rolls

Every oven is different. To get ours crispier, we baked them about 5 minutes longer. Also, if you prefer frying, they'll be just as tasty.
  • Filling ingredients combined in a bowl.

    Cook ground beef in a skillet. Drain fat and put ground beef in a large bowl. Combine all the ingredients (except the egg roll wrappers and the eggs) in the large bowl with the ground beef and mix well.
  • Some of the filling added to the wonton wrapper.

    Place 1/4 cup of the mixture (or 1 heaping tablespoon), in the center of an egg roll wrapper.
  • Folding in the sides of the wonton wrapper.

    Fold both sides in towards the center.
  • Rolling the egg roll closed.

    Fold bottom corner over the filling and roll upwards tightly to seal. Using your finger, dip in the beaten eggs and dab corner to seal. Repeat until you use all of your wrappers or you run out of mixture. (Egg rolls wrappers have directions on the package on how to roll.)
  • Coating the egg rolls in oil.

    Lightly coat a baking sheet with cooking spray. Place egg rolls seam side down on a baking sheet. Brush top of egg rolls with oil.
  • Baking the Southwest egg rolls in the oven.

    Bake in a preheated 425 degree oven for 5 - 7 minutes until lightly browned. Pull the baking sheet out and turn egg rolls over and bake for an additional 5 minutes.
  • A platter of Southwest Egg Rolls.

    Serve with sour cream, salsa, guacamole or sauce of your choice.
