Pickled Bologna

This was given to my by my good friend Dana who works here as a volunteer at the park.
She brought me in some a short while ago and it was so good, I just had to have the recipe.
I don't have a pict, but will take one next time I make this.

Ingredients

1 medium
bologna ring, get a good quality one
1 c
vinegar, white is ok
2 c
water
2 Tbsp
pickling spice your own, or use this combo below
pickling spice combo:
2 medium
bay leaves
1 tsp
peppercorns
1/2 tsp
mustard seeds
1 tsp
minced garlic
1/4 tsp
crushed red pepper

Step-By-Step

1Bring the vinegar,water, and pickling spice to a boil, boil for 5 min.
2Let cool, then pour over bologna ring.
3Refrigerate for 5 days before devouring.
4Serve with crackers, or mini cocktail slices of rye or pumpernickle bread and of course grainey mustard.
