My sister shared this recipe years ago. I have served this countless times and it is always well received. The better the ham the better the results. This would be a great addition to a graduation party or any buffet. Serve it right beside your tried and true cheese ball.

If desired, mixture can be served at this point with crackers. My preferred method of serving is to chill ham mixture in a bowl for at least two hours. Then form mixture into a ball. Roll ham ball in a mixture of chopped pecans and dried parsely flakes. Ham ball should be served with a substantial cracker or sliced baguette. The ham ball mixture can easily be refrigerated for one or two days--but roll in parsley and nut mixture within 30 minutes of serving for best results.

I suggest using good ham. I also suggest using only mayo. This is a great recipe for leftover baked ham. You may find this recipe a good one be used for creativity. I've been intending to use chopped sun dried tomatoes in the mix but I haven't tried it yet.
